On Deck with Emma Simmons

She speaks several languages, including the universal one: music.

Emma Simmons is a senior at Lincoln High School and has chosen to pursue a career as a violinist. She is also a member of the Portland Youth Philharmonic and is a mentor for their Young String Ensemble.

She’ll be performing in the upcoming MetroArts concert on April 1st alongside another young artist we profiled last Fall:  Kristin Qian.

banana breadIn this episode of On Deck, Emma mentions a love of cooking as well.  The following is the recipe for her amazing banana bread:

Ingredients:

3-4 bananas
1/4 cup melted butter
1/2 cup brown sugar
1 large carrot, peeled and shredded
1 large apple, shredded and drained of juice
1 cup chopped walnuts
1 egg, beaten
1 tsp vanilla extract
2 cups flour
1 tsp baking soda
a pinch of salt
1 tsp cinnamon
1/4 tsp ground cloves
sprinkle of nutmeg

Preheat oven to 350 and prepare a buttered loaf pan. Depending on the size of the bananas, apple and carrot, you may have enough for two loaves.Mash the bananas with the melted butter and brown sugar with a wooden spoon. Add the shredded carrot, apple and chopped nuts, mixing with the spoon. Add the egg and vanilla. Stir in all the dry ingredients (flour, baking soda, salt, and spices). Pour into buttered loaf pan and bake for an hour to an hour and ten minutes, testing to see if a knife or toothpick comes out clean.
